Crepes

     My absolute FAVORITE breakfast/dessert recipe is for making crepes! On my first "Welcome" post, I bragged a little bit about my crepe skills. If you follow the recipe I use, you will understand the boasting. The recipe should feed two to four people depending on their appetite.


The Recipe
Ingredients
  • 2 Eggs
  • 3/4 cup Milk
  • 1/2 cup Water
  • 1 cup Flour
  • 3 tablespoons Butter
  • Extra Butter for coating the pan

  1. The first thing you will need is a mixing bowl and whisk, I prefer a Kitchen Aid Stand Mixer, but a usual bowl and whisk will do
  2. Next I beat my 2 eggs for 30 seconds to a minute then add 3/4 cup milk and 1/2 cup water
  3. As my liquids are mixing, I start the 3 tbsp butter in a pan on the stove to melt
  4. After the butter melts, I add it into the liquids
  5. Once all my liquids are mixed thoroughly, I slowly add in the 1 cup milk. Make sure to add it in slowly because if you don't, then flour bubbles will be in your batter
  6. After all of my batter is mixed, then I turn my pan on the stove to about 4 or 5 or if it is on a gas burner, I put it on as low as possible
  7. As soon as the burner warms, I drip the batter onto it and make sure it covers the pan
  8. You will know the crepe is done if the edges start to peel up or it you can touch the top
  9. After the crepe is finished. I prefer to add jelly, powder sugar, syrup, or a compote. (the compotes recipe may be posted later
